A nice cool-running crusoe PC104 motherboard, booting off a ramdisk pulled 
from compact flash[1] ought to do the trick.  And actually, if you license the 
Karlbridge OS, you can have a box that acts as an AP or adhoc mode server.

[1] Conveniently CF is electrically a standard IDE device, so you don't 
    even need a custom chipset.
