An interesting hybrid of electronica and acoustics is the Leslie speaker, mostly closely associated with bluesy Hammond B3 organs. While software emulations have been tried, it is acoustically impossible to duplicate the (dual) rotating beams of sound with any combination of synthesis or multi-speaker arrangements. Obviously, this only applies to a live performance.

Fortunately they are still available (and thus, not exactly part of this discussion), even if somewhat out of vogue at the moment.

There may be many unique characteristics of acoustic instruments due to variations in the materials used over time but electronic audio circuits lend themselves to software virtualization very well.
